Can you give a little more info, like what codes are you seeing? Is this truck bone stock? Any info would be great since my living is made working on all diesels.

Like it was mentioned ... "downshift"

or could be your clutch is slipping "use to have tons of power"

"has 122000 miles on it now" might be injectors... 120k miles on original injectors?

"when ever the truck is pedal to the floor it dont accelerate fast" what gear are you in?

"also recently while driving the temp guage dont get very high when you slow down the temp will drop to 160 or lower" could be due to lower ambient tempatures?

"but is it possible to have codes if the check engine light is not on" yes, turn key to "on" position but do not start three times codes will come up on the odometer. But not all codes will show, best is to have the have them read with scan tool.

"air filter fuel filter seem to be fine" when was the last time you changed your fuel filter? I do mine every 10k mile or every second oil change.

I'm thinking, you might have a air leak from turbo to intercooler to intake. Do you have any aftermarket guages.... boost/fuel pressure/ EGT exhaust temp? If so what are they reading?

the clutch is not slipping, i dont see the reason why you should have to down shift at 50-60 mph, my 05 will climp a hill at 35 or less in 6th gear and gain speed easliy even all stock. i have no guages.
