Its more important to match the tire diameter to the max efficiency point in the engine's torque curve. This number will be based primarily on cam profile vs final drive ratio vs vehicle weight. There is no perfect size tire or differential gear ratio: it all depends.
Oh to be on the lighter frame like your vs. the 1-ton B2500 HD or the extended B3500 8-lug wheels. The best I've done was 19.7mpg using LT225/75R16 Load-E at 80psi. Of course there are other mods like synthetic 75w90 in the rear. 46re with 3.92 as well. The van does about 18hwy now.

Glad to hear your van doing well with the mpg. I only know of one van doing 22mpg hwy like your setup.

I'm just running a cheap ELM27 bluetooth adapter and using the Torque app on my Galaxy 4. What is cool is that I can setup multiple screens, change dial sizes, use round needle gauges, square "half needle" gauges (my preference) or plain digital. Gauge size and position is fully customizable.

My only regret is not buying one sooner.
