I have a 1995 Ram 1500. Does anyone know how deep the speaker cavities in the doors are? And, which aftermarket 6" x 9" speakers fit correctly?

Check out Crutchfield's Web site. They have lots of detail about what fits what. If you buy from them, they include very detailed instructions and unlimited support.

I went to the Crutchfield website the day I got my truck, and they don't list any 6"x9" speakers that will fit our trucks. I contacted them directly, and they said there is just not enough depth to put aftermarket 6x9's in there, BUT... they have adapter plates to put 6.5" speakers in their place. I've heard some pretty good things about the Polk DB650's...
