It's a myth the height could say relatively the same if the size of the tires sidewall height is takin into consideration. If you kept the same proofile ratio of the tire on the 20's it would sit higher, but not 3 inches, maybe half that.
Going from 265/70/17 to 265/70/20 would gain you about 1.5 higher ride height and throw the speedo off by about 6mph too slow.
going to a lower profile on the 20's such as 265/55/20 would keep your overall tire size diameter the same and would not affect your speedos accuracy and it would not increase you ride height.

What about going with a higher profile ratio? Say 265/75/20? Would that give any more? I'd love to get this thing higher. We had a 4x4 previously, but don't any longer and I'm missing the height.

Go with a 285/70/17 or 33x12.50R17, that's a 33" tall tire which is about the same height as the tires on the Factory 20s, and you don't have to change your wheels.
In a Metric tire size like 285/70/17The second number is the Aspect ratio and is a percentage of the width of the tire, so by changing the width you can also chang the the height of the tire. Yes going to a 265/75 will make the tires bigger, but only by about an inch, you'll get about about 2 inches by going to a 285/70 or a 33x12.50.
