Default Temperature problems

I have a 2002 dodge stratus coupe and couple tears ago I had heating problems. I head the whole heating system cleaned and flushed. Whatever they used to flush it started eating up the hoses months later... Car would start overheating... And since the problem was unknown,it got to the point I got a new radiator including a cap, new thermostat, new water pump,.... Then out of nowhere.... Head gasket... So I had it fixed... No more overheating but temperature has been acting funny ever since. Before all these problems, the temperature stayed still a little below the middle but since all those problems and repairs it goes up when going up hill, goes down when speeding or parked. Yesterday I had a new compressor installed and car started overheating again. When AC is off, no overheating. I am exhausted from all if this but love my car too much. I am in gernany (army) and it's hard to find anyone who would really understand American cars. So, besides the fact I will appreciate any input on what this might be but I also want to ask. Would it be OK to take out the thermostat for the summer?
