so do 318 LA heads and 318 magnum heads interchange? are there any water jacket or intake port differences at all? bolt pattern?

If you are putting magnums on a LA block, yes. But....
Magnums need a magnum intake. Different bolt angle
Magnums need different pushrods to get oil to the head.
LA block needs different lifters to supply oil to pushrods.
It can be done but not a good first project. But I think someone does sell a kit with all the custom pieces you need
