I've got the v6 in my spirit, same year, and it's doing the same thing

Check the easy stuff first.
My old Acclaim did this to me once, it was just a bad radiator cap.
I've also had a faulty gauge cluster that would read hot when I turned the lights on.
Otherwise it could be a bad water pump or a bad headgasket.
Headgaskets were pretty common on the 3.0s as well. Usually a set of Felpros torqued to 80ft-lbs (factory is70) will hold up to anything you wanna throw at it.
