coilovers give you the shock and spring as one integrated unit, and offer adjustability in the spring rates by changing the compression of the spring, usually via a threaded collar that compresses the spring- this will obviously also make you car sit lower. some coilovers also are adjustable for rebound, being able to change the valving in the shock for more or less stiffness.
springs are just springs. you can't adjust them- wysiwyg. also, they're not designed to work with a specific shock, so it's not a system. coilovers are pretty much a necessity for racing, but for street driving, springs are plenty good, imo (i plan on upgrading to coilovers in a couple years when i start using it for autocrossing- gotta wait for the warranty to expire first).
