I just installed the Mopar/ Borla 2.5" Exhaust this week and I love it, Deeper tone but just a hair louder. Nothing too loud, it is perfectly toned. It is like a deeper stock exhaust sound.

It depends on how much power you are wanting. If you plan to keep it around 350 HP or less then I would go with the Mopar/Borla exhaust. If you plan on going for more then the Maxxfab full turbo back Mopar/Borla kit would be good for more. Their exhaust kit has 3" from the turbo with a high flow cat that is also 3" in and out and has a reducer that connects it to the 2.5" Mopar/Borla cat back exhaust. If you don't have the money for all of it don't worry, you can get the Mopar/Borla cat-back for now and then order the kit that runs 3" from the turbo to the Mopar/Borla later, that's what I plan on doing since I already have the Mopar/Borla exhaust. But if your going for really big power, like over 400 HP, then you will want a full 3" turbo back exhaust and there are several of them out there for the SRT-4.

3 inch. and right after where the cat would be do a 90 or so degree left and have a side exit that eliminates a hell of a lot of piping

you would only need like a 45' bend and it really woulnt matter the weight is minimal take the cat out and run 3 inch turbo back.
