Default overheating issue 408 strokeran

I was wonder if someone could answer a? ihave a74 challenger just had the motor rebuilt recently on a hot day it just worries me that the temp goes up to 210 . I HAVE ELDERBLOCK ALUMINUM HEADS,HIGH PERFORMANCE WATER PUMP,NEW ALUMINUM RAIDATOR ELECTRIC FAN SHROULD,IT GOES BACK DOWN TO 200,TRIED DIFFERENT THERMOSTATES,190,180 NOW ELECTRIC FAN COMES ON AT180 BUT DOES NOT COOL DOWN TO THATFAN JUST STAYS ON.HAVE THREE TEMP GAUGES ONE MECHANICAL,ONE ELECTRIC AND FACTORY GAUGE READS NORMAL AND OTHER TWO READ THE SAME 200,210.JUST SEEMS LIKE A LOT OF HEAT UNDER THE HOOD.I HAVE ATEMP GUN DID DIFERENT READINGS BACK OF THE INTAKE 210, FRONT OF HEADS 186 ,TOP WATER PUMP 187,BOTTOM 176 TOP RADIATOR HOSE 133 ,BOTTOM 157,OILPan168,headers from driverside back to front 321/445/429/464 passsengerside back to front 317/416/440/457.ALSO it is burning kind of rich/plugs look good and its kind of dark about 7 threads down.Just burns your eyes in garage.

Install a larger, or, another... fan.

Details on the radiator would help, How many rows and size?
