Could be a low pressure fuel pump or a bad injector.

My friends dad has a 2001 chevy who had similar issues. I sounds like it has to get warm to have any power, this is the issue he had, after 6months with the college auto tech class test the pcm and all the other stuff you said they had nothing. My friend took it back home and the truck finally threw a code. Sounded like the cats were plugged, checked them out that wasn't it. Finally he checked th O2 sensors. One had a broken tip, two other tested open, and only the last one was good. The truck never threw a code for the O2 sensors, I would look into it if I were you.

Is the fuel pump or injectors common cause for sluggish acceleration?
I was driving around yesterday, the weather was nice here in Oregon, wow lol and it sounded horrible... I think I may have caused something... I think this started when I looked at the TB, didn’t touch it just checked it out, short time after the problem at hand started... Maybe?
Will check the injectors. Thanks Hydra.
