Brown watery oil?

Could be a weeping intake manifold gasket. It might be a good idea to pull it off and change the intake gasket set and change the Plenum gasket. Also clean it out good.

Well now I'm confused because this afternoon i found that there is coolant puddling RIght next to the thermostat. Could this be affecting the oil?

I doubt it.

However you need to replace the thermostat and gasket if the T-stat is old, well if not then just the gasket. The added moisture on top of the intake could have added to your humidity and added condensation into the oil, little chance but it could have happened.

If it was me, I would just get a set of intake manifold gaskets (the kit set that includes everything you need to do the job) and also the plenum gasket, and just do it. That way you just know it's done and it takes care of any leak that could be present.
