power rebuild
So, i have a leaking head gasket. I said screw it, time to rebuild. I ordered flat top pistons, eagle steel stroker crank, roller lifters, roller rockers, beam connecting rods, chrome moly rings, getting heads done, stock intake(maybe), all mew bearings, high volume oil pump. Now camshaft. I have an 81 with an automatic 360, i know nothing about chosing cams. Cananyone point me in the right direction? I wanna male decent power without having to put in a stall converter.... That sucks.thank you very much in advanced.
Call Hughes Engines: http://www.hughesengines.com
Make certain you use the correct valve springs, you will also need to get the correct push rods.

Have you thought about using aftermarket aluminum heads? A friend of mine has edelbrock heads on his 360, and aftermarket heads aren't as pricy as you might think

It all depends on what the OP is going to use the truck for. If he wants hi-performance (drag racing, etc) then the Edelbrock heads are ok but need plenty of work out of the box to get them to flow. Which, after purchasing the heads you need another $500-up in porting, etc. For just a strong running daily driver stock heads should work fine. A couple other options: Hughes Iron Rams or Indy\RHS heads.
This is the same with camshaft selection - vehicle usage, trans, gears, etc
To the OP: you will also need to be concerned about compression ratio. You said you ordered "flat-top" pistons...pay attention to the piston spec's and your combustion chamber size.

my point about the edelbrock heads was not so much that they are the best aftermarket heads, but that in order to push 400 or 450 hp like the op said he wants to it might be easier and cheaper to just bolt on a set of aftermarket heads than to have a stock set machined

The Indy\RHS heads from IMM Engines is actually a better deal than the OOTB Edelbrock's:
