Default Racing V6 engine

My 2000 Dakota, 3.9L, stick, occasionally races when first started or restarted. It's as if it can't remember or ignores the coolant temperature.
I've not done anything to it as it's a minor but irritating problem.
Anybody have any idea of the cause? Fixes?

Thanks.

My 2.5 did that it was the MAP sensor weird as it would do it on and off seamed to be temp actuated.

New MAP no more problem

Could be the temp sensor, which I have seen. Or maybe a missing O-ring on the Idle speed motor.
