Default Confusing Coolant Temp

1999 5.2 m/t dodge dakota sport. I recently had a nasty whine from the water pump so while i did that i also did; timing chain set, water pump, thermostat 180*, new IAT and coolant sensors, and hughes plenum repair plate for intake, and lastly an E-fan. My question is being the stock temp gauge is so descriptive given the C-210-H my truck has since the e-fan sat around 1/4 of the guage or halfway between 130 an 210, but when i shutdown and the e-fan kicks on "being 12v power source is straight to battery" I sometimes cycle the key forward and the temp gauge will have risen to about 200 almost 210* mark? why would the temp rise after shutdown and is it possible the new sensor is not seated deep enough or faulty? I have been driving it this way for about 3 months now and initially thought air bubbles were trapped inside, but after few hundred miles i have my doubts. If this is normal cool ,but i dont notice it amongst my other cars and given summer is almost here it makes me sort of nervous. Thanks for any input.

It is normal for the temp to rise when shut down.

Heat rises. Where is the sender? On the top of the engine. Once you shut it down you've stopped the circulation of cooler water. 210 is not anything to worry about.

Quite a few cars that have e-fans have warnings that it may start at any time.

All Dakotas with the 2.5 engine run only on an e-Fan and my Fan will come on after sitting off on occasion but not too often.

It has made me jump out of my skin on occasion working on it even though I know its possible it can turn on with the engine off.

When it kicks in its like a tornado that fan is fast and powerful

I appreciate the quick responses guys. I later after the post found an article on engine heat saturation and it put me to ease. But again thanks for the input.
