Default 03 Dakota 5.9L Coolant Issues??

Hey all I just joined here after buying a used 2003 Dakota Quad cab 2wd with the 5.9 V8.

When going to work in the morning the temperature gauge does not budge indicating the engine is not warming up but if I stop and run into the market it starts to register that its warming up. The heater works fine and blows hot air.
Another issue is in the heat of the day while stopped in traffic the engine temp works fine and actually starts to climb indicating its begining to overheat.

The truck had a new radiator installed before I bought it. I've installed a new fan clutch, cap, rotor, plugs, wires, and I've had all the fluids flushed and changed at jiffy lube.

Im thinking thermostat or bad fan clutch from the parts store??

Probably tstat or sensor.

Default Thank you

Installed a new t stat and that did the trick. Truck is now running with the temp holding steady. Thank you all for the input!!!
