How can I tell when it time to change the PCV valve?

Take off the throttle body, look for oil stains in the area of the PCV Valve.

It's time to replace the PCV valve when it's time for a tune up. Every time.

Okay, then: Every time you replace the spark plugs. Unless you're an idiot like me who only does that every 80,000 to 100,000 miles.

Why do I read on here to only use dealer PCV valves? What's wrong with autozone, oreilly's, etc?

They're crap. They usually are too slow to close under high vacuum conditions, leaving you sucking oil into the intake manifold.

Heck, I thought these trucks ran best sucking oil into the intake?
