I have a 408ci Dakota R/T - use it on the street all the time, it's a lot of fun. I don't have any issues, but the cam is relatively mild (almost identical specs to KRC 408) so it doesn't irritate the PCM except for the occasional misfire code. When it really boils down to it, if all other parts were the same a 408 will post somewhat similar horsepower numbers to a 360 block, but it will have higher torque. The key is the overall picture - when most people have a 408 built, they're improving the parts throughout the engine - heads/cam, throttle body, intake manifold, headers, etc. and all of that stuff adds up. It's up to you whether you want to configure it for daily driving (mild cam/2bbl) or racing (aggressive cam/4bbl/big tb/etc.)
There's a decent amount of 408 Dakota R/T's out there, but most of them are on "other dakota sites".
