So I read everyone talkining about putting 285/75/16's on their stock rims. I need new tires to replace my 265/75/16's. I go to a tire shop and they tell me they will not put a 285's on my rim because their book says you have to have an 8 inch or bigger rim not a 7 inch. Is this true? Because if so now I have to buy some different rims and tires. Any experience with this guys?

Thats right alot of places wont put that tire on a 7 inch rim only because of an liability issue , But if you buy the tires like on line and find a small shop to put em on ..what place was this jack williams ??? lol
It was a small type shop in the area who sells new or used tires called Mr. P's. Are there any real liability issues? I don't do anything extreme. Just daily driving.

No there is none to you...its just the shop . if some freak way something would happen and the tire place installed 285 then they mite get sued.. just a CYA

I am running 285/75/R16 on stock rims for over 6000 miles now and not having any problems. I have Maxxis Buckshot Mudders.

If they go by a fittment guide they will not bend. Better off finding another shop.

285s will be fine on your 7" wide rims. Just get yourself a can of ether, a lighter, and an air compressor and you're good to go.
