I check the fluid levels in all my vehicles every week. No and's, if's or but's about it. Differentials get checked at every oil change.

the plenum gasket is probably leaking again. the steel plate, too short holes, and too long bolts all combine to be a really $hitty setup. replace the steel plate with a hughes plate.

disappearing coolant could be just water pump going bad or a leaking radiator, hose or clamp. if its head gasket you'll see steam, or white smoke, or water in oil.

I figured it was the steel plate from the plenum. Will keep you all informed on what I find out.

Agreed! I check all fluids (Oil, Coolant, Brake fluid, PS fluid) once a week. The under side stuff like (Diff's, transfer case, and manual trans) I check once a month. No if's and's or but's here...
