True duals dont flow as well as duals with an h-pipe or x-pipe. I personally dont think it makes to much of a difference on the trucks. Mine is a 3 inch in and 2 1/2 duals out and i get same mileage power everything as my uncles that has true duals. Now on a high compression high hp and torque motor its a different story.

I would run 3" with a x pipe. Magnaflow makes an excellent muffler as well as Borla (not sure if they make it for your Ram though). Forget about Pacesetter and go with JBA exhaust headers or make the ultimate sacrifice and go with TTI exhaust,

Dual 3" is way too big, 2 1/2" is plenty. I would go off the headers into a cat for each bank then into an X pipe and then mufflers of your choice (I personally love Aero Turbine mufflers.).

I have 3" dual x-pipes on my Demon which is half the size of the Ram. Either way it is better than stock,

Vehicle size doesn't matter.... It's all about what the engine is producing. IMO, if you plan to stay under 550HP, dual 2 1/2 is plenty.
