if you have a tie rod separator then you can take the tie rod off and hang it from the shock tower with some rope. then the knuckle will rotate easily and you'll be able to hit the bolt heads.
a good penetrating fluid is the first thing you should do to the hubs, while anti-seize is the last thing to do before putting the bolts back in.
keep in mind that your wheel bearings are inside of the hub and bearings don't like hammers. if you hit the 14mm bolts then it won't hurt it but if you beat on the side of the hub then there is a good chance that you will need a new one. its best to take one of the 14mm bolts to a hardware store and get some grade 8 or better bolts to go up against the hammer so you don't mess up your stock bolts.
yes the axle will just slide out (with the hub if you don't push the stub shaft back while pulling the hub out). you have to support it between the knuckle and the axle tube and keep it centered in the axle tube. when i changed my u joints i screwed up the axle seals and those are tons of fun to change.
