Is her insurance paying for it, or is she paying for it out of pocket?
If you haven't already, and especially if the cops weren't involved, take pictures of your damage and hers. If you can, if your digital camera has the feature, make sure the photos are "stamped" with the date/time in one of the corners.

Make sure her insurance company doesn't give you an "aftermarket" bumper. Make them pay for an OEM one, or least give you the cash for an OEM one. Aftermarket would probably work just fine, but since its her insurance forking over the dough, no reason why they shouldn't restore your truck's rear end to its factory (OEM) original state.
Also, make sure anything to do with your hitch (bolts, where it connects to the frame, etc.) is fine, otherwise make sure they see that and pay for that too.

i'd say a real nice dealership bumper replacement might be about the same cost as a ranch hand/buckstop type super bumper...
