Dreaded Rust
there is a weld-less option these days. You can get panel adhesive and attach the panels using that instead of welding. You'll need to clean the area of rust first and cut out any corroded metal. I don't have a name for the stuff I have used in the past but you should be able to get it at any Automotive bodyshop supplier.
I just got rocker panels from lmc. They're very nice, I was actually surprised how thick they were. I'm going to be putting them in the next week or so while my trans is out getting rebuilt.
3m 8815 is the adhesive. very strong used it myself. I am a body man and there is no cure to rust. Rust is the cancer of the auto world. once you get it the only way to get rid is completely remove. so my 2 cents would be to have to replace the rockers. BUT rockers are one of the hardest things to replace on a truck just FYI. O and btw -1000 on the stainless stuff. all that does is collects water and lets it rust behind it.
Here's a question - say you get the lower outer skin and the lower inner panel for a door - weld it all up, how do you keep it from collecting water and rusting like it did in the first place?
According to popular theory, there are drain holes built in..... over time they get gunked up, and stop draining..... next step is rust. have a look at the new panels when you get 'em, see what ya got.
What I would suggest, is putting something on them before installation, when it is easy to get to, and you can ensure good coverage...... and then put it together. Just don't put anything on the areas to get welded.

Easier said than done for sure - the heat affected zone for sheet metal is significant and any paint/primer will flake off and you'd never see it. Those panels aren't cheap and it'd suck for them just to rust out again. Maybe there just needs to be a larger access hole to drain and spray into.
