Default Running a little warm

First of all let me say my truck runs great and idles great. BUT, I have noticed that I run at about 200 and can climb to 215 going upgrade but usually drops within 10-20 seconds. Is this a problem I should be concerned with? I've read through several threads including VW's infamous overheating thread and I've considered replacing the IAT just for Shiz and giggles, but is this necessary? I figured it may idle rough if the IAT was bad. I have never replaced the thermostat and thought well maybe I should put in a new one, but I felt that a thermostat either worked or it didn't unless it was sticking. Any ideas? I could just be paranoid.
