as said temperature control is all manual/mechanical.
engine constantly generates heat and tries to overheat.
water pump and radiator try to reduce heat.
t-stat tries to referee the game and hold engine at 195*
if everything works right, it holds dead on 195*
if any of the 3 malfunction, it swings one way or the other.

assuming your cooling system is working right, and you don't have any engine problems, put in a 180* Stant Super-stat and it will run at 180. the computer cannot/will not raise the temp.
don't put in a cheap $5 stat, get the better $10-12 Stant.
don't put in a 160 unless you want a permanent CEL and no heat in the winter.
