When I hit the brakes really hard and come to a complete stop, my oil pressure gauge reads 0 and My oil light comes on. It goes back to normal when I hit the gas again. This has happened to me in the past, and it was because i needed to add oil. Assuming that this is the problem, my question is: Where is the oil going?
I have done the plenum repair.
There doesn't appear to be any external leaks.
What other options are there? Piston rings?
I guess it's not too much of a surprise considering the engine has 245,000 miles on it, but i don't like it. Any suggestions would be appreciated.
Rod or main bearings. You can try changing the oil pump and screen which is a fairly easy project.
Would't a bad rod or bearing cause a terrible rod knock? If so, there is no knock. It runs perfectly fine. Plenty of power, good fuel economy (if there is such a thing with these trucks). I'm just losing oil pressure.
Since you are losing oil, it's gotta be goin' somewhere..... should be able to borrow a compression tester from the parts store...... Or, if you are bored on the weekend, I have one in the garage here.

No, as they wear from age and the engine heats up, the metals expand and the clearances are not as tight, so the oil pressure is not as high.
EDIT: and yes, as HeyYou says as far as losing oil goes.
