I did not get a chance to look today but will tomorrow.

So are you saying the p0118 code and the dash temp gauge reading are not related?

Quite the contrary, the two are most certainly related. I am thinkin' if you solve one part of the problem, you will get the other part by default.

The gauge dropping to zero is not exactly what I would expect from a high voltage condition though... I would expect it to peg out.... Check the connections at the PCM, I wonder if you have a bad connection giving you bad readings.

Is there a way to get a new connector for the 2 wires that go on to the ect?

That is probably the problem as it was disconnected for the plenum install.

Ive called around to junk yards and no one seems to have the electrical connector that goes hooks on to the ects.

Does anyone know where to get one?

I see for the 2002+ you can order them online.

Call your local parts store, and see if they can get one. If not, dealer might be your only other option if the junkyards don't have 'em.

Good luck, I hope it's the problem. WHile you are there, have them print out a build sheet for you.
