Help me deside new tire size

Got my new tires tonight;
Mastercraft Courser CT LT265/75R16 E load rating.
I plan on going bigger after I regear to 4:10's and get new Rims.
They seem to handle nicely around town, no more road noise than a standard tire. May try a little off road this weekend.
