Default Wheels and offset information

Need some information on wheels! Don't know alot about this stuff. I have a 97 Dodge Ram cab ina 1/2. It has about a 4 inch lift. When i got it, it had 265/75/16's on it. My rims are 5 bolt,16x7. I was told that i could go bigger, and put on 285/75/16's, so we bought 285's/ Peerless widetrack Baja's and put them on. When i drove it i found out that the tires hit some metal bar{have no idea what it's called}, when i turn the wheels real sharp.I was told that i need offset wheels. Someone told me to get 16x8 with an offset.I don't know anything about this offset stuff.Does anyone have any idea what size wheel and what offset i would get? Please Help!
