Default Starting to over heat!

Well about.. 19,000 miles ago I changed out my water pump, it was leaking bad. But ever since I had no problem. I yet to change the stock thermostat. Anyways, yesterday I was driving to a job and my truck hit 260 and started to smoke, so I poured about 2 gallons of coolant in it and got home. Today, I went to change my coolant and seen that it was about 3/4 full. Trucks been running about 225/230

It would always run at 200-210 normally.
I didn't see any leaks on the ground, I checked all my plugs, and no coolant, oil looks clean. I'm not sure if a head gasket is blown or if a bad thermostat is the cause.

When my truck had hit 260 and started smoking, I popped my hood and noticed there was coolant all over my intake box, powersteering, and covers.
Do you think that might of been because of all the pressure, it was just finding it's was out of the hoses? That's never happened before.. I'm at a loss. I'm thinking about getting a new thermostat, and resealing my waterpump after I inspect it. Any other things I should try to take a look at?

Possibly the bypass hose from the pump, to the intake. Pressure test the cooling system, and see what happens.... (and change the thermostat....)
