Question Engine Bogging

Hey, I have a 2001 Dodge ram v8 5.9 Laramie. I have been having this problem with the engine over the past 2 months since I bought the truck. The engine will bog down and have no power or thrust or even move at all when I start from a stopped or slow moving position. It only happens on a rare occasion, mostly when pulling out of some place and when I need to get out a little quicker because a car is coming towards me, the truck acts up.

I noticed that it would happen every time I get home from school and let it sit for 30-40 minutes before I leave for work. It has happened with a full tank and low tank. The fuel pump was replaced back a few years ago is what it says on the car fax.
Has anybody ever heard of this happening before?

plenum gasket fixed?
last tune up?
is the cat clogged?

The check engine light is not on. It never throws a code. The I bought it from the dealer at beggining of summer and was in his shop for a total of 2-3 weeks over the course of 2-3 months. It has been tuned up really well. We have done multiple gas test to see if its the plenum gasket and all the tests have passed and more than one guy have done that test. Not sure about the cat.

If it is repeatable after sitting once warm..... I would suspect an electrical sensor first.... how many miles on the truck? Replaced cam/crank sensor yet?
