Alright so I rigged it up to my windshield so I could see when I drive and when it starts dieing on me the pressure will flutter super fast between 40 and 50. It actually stalled on me for the first time. Reached 200 rpms, truck wouldn't even move, then I got a "check gauges" light, and then stalled.

Swap your horn relay with the fuel pump relay. See if the problem goes away.
