Final torque spec of 105 ft/lbs is correct. Are you sure its the head gasket and not a cracked head or the freeze plug in the head making it look like its the head gasket?

There's a freeze plug behind each head, it might be possible that during the installation of the CPS, the freeze plug may have been damaged. Probably from rust.

Take a mirror and flashlight and see if you can see the leak. You also have the heater hoses above that could give the impression that a water leak is behind the engine.

Best is to use a pressure tester, take it to 13-15 lbs and you should find the leak fairly easy.

You can get some dye you put in the radiator and then use a light and glasses to be able to see the leak. It works pretty good too.

So what kind of issues did you come across by not pinching the wires between block an tranny?
I'm curious I'm going to be doing install soon was kind of worried about that sensor

Your best bet is to REMOVE the sensor FIRST, yank the engine, and install the sensor AFTER you have the engine in place. Yeah, it's a bear to get at there, but, better than having to buy a new one.

just take the time to remove it,you'll have enough things to keep out of the way,the way it is
