Default engine lag in the cold

well this is something i experienced this past winter in the extreme cold when i first started my truck up and i did not let it run for at least 10 minutes when i would go to take off the truck would lag i could put the peddle all the way to the floor and it would maybe hit 30 mph then if i kept holding it it wild knock really hard and lag even more i was afraid i would damage something so i would let off the gass i had to put it in park and then in drive again and it would end up fixing the problem. anyone have the same thing happen?
