Default Help me!!! Before i set fire to my truck!!!

My 01 Dodge Ram 4wd quad cab will be running like a champ, then just out of the blue it will just randomly start sputtering and cutting out like its going to die. Then will clear up and run fine till it acts up again. It acts just like an old carb motor when it is loading up. I've only noticed it in low rpms its never done it when I have OD turned off. A few times when I start it up it won't idle and will die when shifted into gear. Its driving me nuts it has acted up cold and hot. I'm tired of throwing money at it.

List of new parts EQ heads, harland sharp 1.7 roller rockers, hughes plenum kit, cyclone timing set, harmonic balancer, Short headers, both O2 sensors, Jegs offroad Y pipe, Super 40 flowmaster, water pump, belt, spark plugs and wires, Cap and rotor, coolant temperature sensor, radiator cap and hose, CAI, 180 deg thermostat, cleaned TB and replaced IAC, throttle cable, transgo shift kit and a fresh transmission rebuild. I think that's all the new parts.

Now a little back story on the truck I bought it from a older lady who couldn't afford to get the transmission rebuilt so I was going to use it for parts but the more I drove it around the place and looked at it I thought it was in too good a shape to use for parts to keep my old tired 00 dodge reg cab going. Well it started to have an exhaust leak that's when I noticed the back two right side manifold bolts where broken off. I had to pull the head and found out it was cracked so I tore into it and started ordering parts. Got the motor all back together took it to the transmission shop had it rebuilt and a shift kit added to it. Truck ran like a champ, put almost 800 miles on it without a hiccup. Towed my 26ft camper to deer camp unhooked ran back into town truck started acting up hunted for 3 days without moving the truck. Afternoon of the third day thought we would ride around to see how the truck was going to act and if it could tow the camper home. Truck was running really rough and wont idle at all. Yesterday I but 30 miles on it just riding around when I first started it the truck acted up and cleared up when I was almost back home we started up a little hill and I wasn't sure it was going to pull it because it was acting like it was getting smothered out and popping out the exhaust then it cleared up run like a champ rest of the ride home.

Didn't see anything about replacing the cat in all those parts or did you delete it? Check engine light on?

I delete it and non foulers installed. Light was on before installing the non foulers. Truck actually ran better before non foulers was installed on the back O2 sensor.

I'm not sure how old the fuel pump is. Do you know what the psi should be when I check it?
