It sounds like it's surging this - WHAAA WHAAA WHAAAA in rapid succession
I think it could also be the downshift transmission cable (TV cable for short)
You might have to adjust it.
Possibly previous owner have replaced or rebuild transmission and forgot to get it adjusted right.

ok, I'm grabbing a mechanical oil gauge tonight and once I figure out if it still has good pressure, I'll look into getting a new cable.
Thanks for the help so far! I'll keep everyone updated once I get a chance to install the cable

Looks pretty good for 1500, congrats!!! Make sure when you tow, you have OD off - else a new torque converter may be in your future. Wouldn't hurt to put in an aftermarket trans cooler either.

Quick update - put a mechanical gauge on it tonight, it read high (around 60-70) but it might be because I rigged it up fast and not super tight. Good news is that it has good pressure. I ordered a MOPAR replacement sensor for $52 shipped from rock auto, I will report back again when I get that installed!

Not being critical, but instead of tossing parts at it....An alternative would be get one of the ODB2 bluetooth gizmos and the Torque app (like $20 total), and see what the cpu is thinking that sensor is reading, then double check the sensor output with a volt-ohm meter. Might be a bad wire, poor ground, or the cpu is hosed up. That is, assuming you have an android cell phone...

Well, get the blue tooth unit, then get torque on your cell phone... connect to the elm unit via blue tooth, then launch the Torque app (available on google play). If you have android, I don't know what is available for ios. There is a bunch of videos on how to do it, do a web search.

Quick update for everyone.

Bought the MOPAR sensor and finally got it in the mail and installed it yesterday, while it was 4x the price as the generic one, it actually worked to fix my issue!
Hooray.
now the unfortunate side is that while test driving it, someone sent a rock flying, and it cracked my windshield. So I'm going to attempt that fix, along with finding a new dash that's not $400 (dont we all need one?)

Geno's Garage, or LMC truck have them. Used to be under 300 bucks, haven't checked lately.
