I think my best bet at this point is to get it into a shop and have it diagnosed
The fuel is regulated by the pump, so unless it's a high pressure pump that rules it out. Injectors are controlled by the computer. So either the computer is keeping them open longer, they are bigger injectors, or the computer is seeing something that is causing it to dumb more fuel.

Everything is stock oem except I put new spark plugs in and did the valve cover gaskets

Ok that's good. Where I would start is trying to get some live data. O2 sensors could be old and tired and reading to much air causing the computer to dump more fuel. Honestly though this is all guesses until you look at the live data.
