i had the same problem several yrs ago on my 95 ram 360 (changed plenum plate, broke coolant sensor and replaced). i purchased an advance after market sensor. since then the coolant gauge runs just to the right of the mid range marker (200 degrees is the mid range marker). i never had any overheating problems. the radiator hoses do not feel any hotter than before.
while diagnosing a coolant leak i replaced the thermostat but it had no effect.
I did not replace the sensor and i have put 50,000 miles on the truck since then. so i have just lived with it. I put as little money as possible in it. it is one fender bender from the junk yard.

Update on the sender issue. I finally broke down and purchased and installed a Mopar sender and lo and behold the gauge reads correctly or pretty close anyway. The WVE and Standard Motor products senders worked nearly the same. I purchased the Mopar sender from an Ebay seller for ~ $38 including shipping and tax. My local Chrysler dealer wanted almost $61!!!! before sales tax. Checked a couple other internet Mopar parts sellers, the cost to my door would have ended up around $50.
I purchased the WVE and Standard from Rock Auto while they were less than $10, neither worked properly so they were worthless. At least I received credit from Rock Auto for the WVE, I did not have the nerve to ask them to refund for the Standard too.
I have to wonder why it is so flipping difficult to make a sender that works properly for the temperature gauge in this truck. I have used both WVE and Standard Motor parts in other places with good results. From what I've read pretty much every after market sender results in the gauge reading high.

Just purchased a Lexus RX 300, coolant temperature was was read nearly 30 degrees cooler than inlet air temperature after the car sat over night. Replaced coolant temperature sender with a Standard Motor products sender (made in Mexico), it works perfectly. Go figure. I still wonder why the aftermarket has such a hard time making a sender that mimics the performance of the Mopar sender for the gauge in Dodge trucks. From the information I have gathered the aftermarket senders, regardless of source always read high. Anyway aftermarket senders are not all junk. It just seems that nobody but Mopar can get it right for the gauge in our trucks.
