Default Does a 2001 5.2 have a safety on the temperature

Today I was pulling a trailer with a jeep on it. My temp usually run about 190. Today it got upto 205. When it did the truck would shut down while riding down the road. Then truck would start up and run fine for 5 minutes. After 6 times I let the truck sit for about 1.5 hours. Transfer the trailer to another truck then drove the Dodge home over 1.5 hour and it ran great. Temp was only 190 then.
any help please.

No. There is anecdotal evidence that crank or cam sensors can stop working when they get hot. Do you have a CEL ? Another possibility is that there's something wrong with the fuel delivery, similar to the old fashioned vapor lock.

If I’m not mistaken, 205 is a “safe range” as long as it doesn’t exceed 215.

205 is not even half way up the scale. From the FSM: "Each time the cluster receives a message from the PCM indicating the engine coolant temperature is above about 122° C (253° F) for gasoline engines, or 112° C (233° F) for diesel engines, the gauge needle is moved to the appropriate position on the gauge scale, the check gauges indicator is illuminated, and a single chime tone is sounded. "

Best thing to do is try to get it to shut off again and see what you are missing. Fuel or spark

The fuel rail looked to have plenty of pressure, took cap off and had very strong pressure at valve.
starting lean to no spark. Maybe coil going out?
