Monitoring input voltage likely wouldn't hurt either.

We did this, the voltage at the sensor does not match the voltage to the PCM, the guy who I had look at it knows his stuff when it comes to electrical. Saw the voltage loss. Said to check the grounds which we did and then said its probably PCM. Might also explain the parasitic draw I've been dealing for the past 5 years I've owned it. Tried everything to locate the draw and could never find it, might of been the PCM slowly taking a crap.

There is no ground involved. It's a closed loop, one wire from the PCM that supplies the 5 volt signal, and one wire going right back to the PCM after being modified by the sensor. If voltage to/from the sensor is stable, and not reflective of what the PCM is trying to tell you, it's either a bad connection at the PCM, or, a bad PCM.

Just a quick update to the issue, it was the PCM. bought one on ebay with the same part number and it was flashed to my vin and mileage so it was plug and play and all is good! goes up to temp around (195F-205F) and the factory gauge operates normally. So if some one else sees this issue your PCM may just take a crap out of nowhere.

Thank you for following up! This is the kinda tech that'll help others in the future. How/where did you have it flashed? How much $?

How'd you flash it to your VIN and mileage?

PCM cost $250 from an ebay seller with 100% feedback and almost 7000 sales. All he deals with is PCMs.
The bonus is that the Vin and mileage flash is free with the purchase. It arrived in 2 days and was plug and play. The PCM solved a few other small issues I was dealing with including my AC not responding when I turned it on. Like I mentioned before I have always had a parasitic draw and that may have been the PCM slowly getting worse since the culprit was a voltage issue.
