Default Plenum

I'm getting ready to replace my plenum plate and gasket, any tips? Also should my engine rev up and idle higher when I take the hose off of the pcv valve?

Yes, pulling the hose off the PCV valve allows the engine to suck in air, that it wouldn't get with the valve in place. It's a metered valve, it restricts airflow to a specific value. An open port will not.
