I came back to update and post that after much weeping & gnashing of teeth, and clicking all kinds of link in all kinds of places, I found a link to this: http://starparts.chrysler.com/starli.../salescode.pdf
There is no cover sheet or title, and the date on the PDF is Tuesday, 01 April 2008, so I hope it's not some sort of weird April Fool's joke. (Joking myself there - it's legit.)

...and you can find a lot about a lot of vehicles.

So according to the above:
MBF: Bright Rear Bumper (I assume "Bright" means "Chrome" to most of us regular folk)
MQF: Body Color Rear Bumper W/Step Pads (for everything except 1st gen Durango)
...which matches up with what you found.
Looking at my build sheet from your original link, I see:
...which makes sense since I have the Sport: my bumper is black and matches the truck.

GM used to put a label in the glove box that listed all the option codes for that particular vehicle. Wish dodge would have done the same.....

Well it's not a label but a tag mounted on the front passenger side of the radiator support. It lists every option on the truck like a fender tag on the old mopar vehicles(60's-70's). The sticker under the hood lists some of it but not as detailed as the tag. dodgeram.org used to have a of info listed but the site is down now and can't excess it. My Indy has a roll pan and it is not listed on sticker under the hood. It makes me wonder what the code was for a roll pan. Check out the link below, it has both of the codes you asked about.

There may not have been a code for a roll pan. It might be a bumper delete and roll pan as part of the package. The thing to keep in mind, none of the car makers ever worried about collectors down the road a few decades. The metal tags were used for many years on all of them. The build sheet, tags and such were there to help with the assembly process. Stickers came in and metal tags went out to keep costs down. It's called M.F.C.I. (Manufacturing For Continuous Improvement)

As stated earlier, the build sheet obtained from the link that HeyYou provided - at least the build sheet for my specific vehicle - did not contain sales codes. So instead, I went to the old link given for retrieving a build sheet (link found in this thread/post: https://dodgeforum.com/forum/2nd-gen...-my-truck.html ), which is really a "Contact Us" type page.
I entered my VIN and in the Description box under "What Can We Help You With?" I indicated that the build sheet retrieved from the other page did not include sales codes and requested one that did. Within a 1/2 day (YMMV) I received an email of my build sheet with sales codes (in the body of the email rather than a PDF). Lo & behold, it included:
