My 98 V-10 has two O2 sensors, (one in each bank) but, no 'post-cat' sensors. I have two cats, but, the exhaust system isn't stock either..... no idea how it was configured originally, I believe it was dual cats.....

Correct. Every V10 has one O2 sensor in each downpipe, the California emissions trucks have two more, one before and one after the catalytic converter. CA trucks have one monitored cat, federal have two non-monitored cats.
