I say do it yourself. But if that is not possible, then find a good local mechanic that you can trust and that is willing to do custom work, and he will become familiar with your vehicle over time as you take it to him for various mods.
If you could get a dealership to agree to even do aftermarket work, they would be a good place to go. The mechanics are usually very knowledgable, but dealerships tend (in my experience) to not like to work on non-stock vehicles. Don't expect much help later if something they did that is non-stock isn't working out or breaks.

The dealer wouldn't do anything for you anyways, they only use genuine mopar parts. Also, I would trust any other mechanic over the dealer. The dealer works off commision so they try to get you to buy as many parts as they can. Local mechanics know just as much as dealers, sometimes more it seems [:'(] These engines are VERY simple so theres no need to only have the dealer work on them!!
