i went to the tire and alignment shop and they said i could put 305/70/16s on my truck but they would rub at full turn. i think thats the way im going to go

Where did you find 305/75/16. The only thing that I could find were 305/70/16, which according to the conversion chart are only about 3/4 inch wider but no taller. The 305/75/16 would be nice but I just couldn't find that size in the tires I looked at on TireRack.
I was going on information 3 or 4 years old ... when I was getting my BFG's I was certain they offered 305's in a 75 profile ... maybe not. Even if they did, they don't now. They DO however have LT295/75/16 ... and since my 285's only rub a bit at full lock ... when I install a modest 3" lift, I'm going for the 295's.
Yes they should be fine on your stock wheels. I have 305/70R16 BFG MT's on 16x10 wheels. My truck has a 3" Skyjacker kit and I get rub when I'm at full lock and hit a bump at the same time. It's very minor but I can get them to rub. I think if I didn't have the wheels I did I'd be fine. I think the reason they rub is the backspacing makes them stick out so when turned and you hit a bump it will hit the plastic fender lining.
They will fit on the wheels. 7" shouldn't be too narrow. I know many people run them on 8" wide wheels and I've seen several pictures of guys running them on stock wheels. They should be fine.
