Some cars require that you click the cap so many times before starting the engine at a gas station. Or, it will take a few start ups for the light to come back on. It could be something in the EVAP system.

I filled it up yesterday and put about 50 miles on it. I had to go to do some work today and it came on after about 1 mile after leaving the house

Yeah, normally with vacuum operated systems like the fuel tank it will take a while for the CEL to trigger. Could've simply been the fuel cap wasnt locked, and it came on. In order for the CEL to go off, it wouldve had to go through so many start ups with the cap on or the CEL wouldve had to been cleared. Did you get a chance to read the code?
