Ummm......You don't even have MDS! How can you give any reply to that? Your sig says 2005.

For the guys who say no to plat plugs, what do they do to the engine? Rough idle or something like that?

They don't burn as hot as the copper and can cause issues.
You need NGK5306 v-powers for the Hemi. These are not platinum.

Are those for the Laser Iridiums or the regular iridiums? I think I paid around $11 bucks a plug when i've bought them in the past.

V-powers aren't platinums...their g-powers are cheapest plats NGK makes but they're still like 5-6 bucks.

What issues can platniums cause?

I just ran NGK copper plugs in my truck. Cannot remember the part no. but from what I was told the copper was a hotter plug and was better to run in my HEMI so thats what I went with. Oh and to the OP don't forget the antiseize could be the most imprtant 3 seconds per plug you spend while chaniging em out.

How hard is it to replace the spark plugs? Can any Joe Smug replace them or does it take a little time and knowledge?

i did it in under 2 hours by myself with basic hand tools and extremely limited use of my right thumb. all you need is a 5/8" spark plug socket, couple of different extension sizes, ratchet, and 10mm socket. youll have to mess around with getting it to fit, but its not hard. just put in the socket, the extension, then the ratchet and youll be fine.
