Theres no gasket to scrape away in an 03 Hemi.
There's a metal thermostat with a rubber ring around the outside of the Tstat.
The rubber ring is the gasket.
When you re-assemble, make sure you seat the Tstat in the housing the correct way and don't "pinch" the rubber gasket when tightening it all up.
An hour tops, should see you done.
