You'd be the first person that got "leaned out" from just a CAI install.
I had to do a CAI, Long Tube Headers & a Tuner set with the timing way advanced to lean me out and then it wasn't really noticeable without the aid of a wide band at my local performance shop.
A cooler thermostat (180*) will richen the mixture slightly.
But I'd check the sensor in the throttle body first and even though I can't see it needing to be done, a PCM reset can't hurt.
Pull the fuse marked PCM #19 if memory serves, get back in drivers seat, turn key all the way forward as if to start. After regular chimes, there will be two more chimes, pcm, tcm.
Turn key off, reinsert the fuse and start up motor. When you first start motor for the first time, it will take a bit longer than usual to start. This is normal.

What sensor in the TB? There isn't one in my 08. There is a AIT sensor in the Hemi hat which relocated into the intake tube.
I am assuming that the OP installed and reconnected the AIT sensor in the CAI?
